Baci Sacher Torte

Rich chocolate is brought alive with the zing of marmalade in this fresh take on a classic.

Difficulty: Hard

Prep Time: 1 hour

Serves: 4 people


142 g butter

113 g flour

6 Baci® Perugina®

6 eggs

57 g + 142 g caster sugar

113 g cherry marmalade

113 g thick cream

227 g Perugina® dark chocolate

Round baking tray



Bring butter out of the fridge at least 1 hour prior to commencing preparation to soften

Mince the Baci® Perugina® finely and put in a double boiler to melt over low heat, stirring slowly to avoid the chocolate burning or sticking.

In a bowl wip the butter with 5 ounces of sugar until it gets soft and foamy.

Separate the eggs and set aside the egg whites. Add the egg yolks to your butter and sugar mixture and mix well.

Whip your egg whites into a firm meringue.

Add the melted Baci® Perugina®, the flour and the egg whites.

Place the dough in a round baking tray and cook at 170° C for 40 minutes.

Prepare the dark chocolate glaze by melting the dark chocolate with the cream and 2 ounces of sugar.

Remove cake from oven when ready and let fully cool.

Once cold cut in half and spread with the marmalade.

Place the other half on top and cover with the glaze.

To serve:

Before serving, sprinkle the surface with cocoa powder and decorate with slices of strawberries.
