Jean Michel Raynaud returns to the Callebaut Test Kitchen

Returning to the smooth Festival of Chocolate in The Rocks in 2017, Jean-Michel Raynaud has worked in Michelin-starred restaurants and haute pâtisseries / chocolateries alike across France and won multiple gold medals in cake decorating and sugar work

With the release in 2015 of his first cookbook The French Baker, Jean Michel continues to cement his position here in Australia as one of the leading pastry chefs, both in his teaching of staff, classes to the public and also within the industry as a consultant.

La Renaissance, with Jean Michel at the helm, was admitted in 2015 to Relais Desserts, an organisation which recognises the very best in the profession of French pâtisserie. Not only is Jean Michel the first pâtissier in Australia to be invited to join, he is also the first in the Southern Hemisphere – a true achievement and culmination of  35 years of dedication to the art and technique of French patisserie.

La Renaissance are thrilled to be returning to the Smooth Chocolate Festival in The Rocks this August with a demonstration by Jean-Michel in the Callebaut Test Kitchen on Saturday 12 August at 12pm. To enter to win a seat at Jean Michel’s demonstration head here.
