Jenifer Lo's ‘Bakedown’ Almond, Coconut and Lychee Bark

Bakedown Almond, Coconut and Lychee Bark

A merriment maker with a big passion for baking, Jenifer Lo of Bakedown Cakery is a new edition to the Callebaut Test Kitchen stage in 2017. We are thrilled to have her up on stage demonstrating her fun approach to chocolate!

To celebrate, she has shared this fantastic recipe for her "Bakedown" Almond, Coconut and Lychee Bark

Ingredients

600 g Callebaut 54% Dark Chocolate

20g Freeze Dried Lychee

100g Toasted Almond Slivers

100g Toasted Dessicated Coconut

Coloured Cocoa Butter

Luster Powder

Guitar Sheets

Method

  1. Prepare the guitar sheet by painting tempered cocoa butter (around 30-32 degrees) with a paintbrush with your desired pattern. Sprinkle with a touch of luster powder and set aside to dry.
  2. Place 400g of the chocolate in a stainless steel bowl over double boiler. Melt chocolate to 50 degrees (no higher).
  3. Add the remaining 200g of chocolate to the melted chocolate and combine—the temperature should be around 34 degrees when just combined (if it’s above this temperature add more chocolate to bring it into temper).
  4. Stir in the lychee, almond and coconut until everything is coated in chocolate
  5. Spread thinly onto the prepared guitar sheet with an offset spatula
  6. Place the chocolate in the fridge for ten minutes until just set.
  7. Remove from the fridge and snap into shareable pieces.
  8. Enjoy!!
