Riccardo Falcone joins the Callebaut Test Kitchen

Riccardo Girardi Falcone brings European pastry training, Michelin-starred credentials and a generous sprinkling of playfulness to the Callebaut Test Kitchen Stage at the smooth Festival of Chocolate in The Rocks.

Trained at prestigious European culinary school and having worked at Michelin starred restaurants in England and Milan Pastry Chef Riccardo Falcone now calls Rockpool Dining Group home.

Riccardo wasn’t always destined to be a pastry chef. As a young boy he had ambitions to become an architect, but while attending artistic school realised that sitting still wasn’t for him. He much prefers the on-the-go, busyness of a kitchen where he enjoys being kept on his culinary toes and continuing his professional development.

Riccardo’s favourite material is chocolate, which he relishes working with for the technicality and difficulty involved, as well as the ability to always learn something new about it. He favours organic produce for its superior taste and likes to bring a freshness into his desserts. “I like harmony in my desserts, nothing too sweet, so perhaps incorporating some fresh fruit, especially at the end of a meal,” he says.

“Ice cream making is beautiful as well and I love playing with desserts,” he says. “Once you have good skills, it becomes a game.”

Riccardo's much publicised, skillful signature dessert "The Dragon Egg" is a favourite with Sydney foodies and audiences in the Callebaut Test Kitchen will be able to see him demonstrate it on Sunday 13 August at 3pm.  To enter to win a seat at Riccardo’s demonstration head here.

The Callebaut Test Kitchen is designed and built by the team at Knebel Kitchens and will be located on the Overseas Passenger Terminal Forecourt.
