RECIPE: Mango and white chocolate icy poles with macadamia nuts

Even in winter you can close your eyes and taste the flavours of summer in this delicious icy pole. Mango, white chocolate and macadamia nuts make for a delicious and sunny treat.

Servings:  Approximately 20 icy poles

Preparation time: 15-30 minutes

You’ll need: Lindt Excellence Extra Silky

Difficulty: Easy

INGREDIENTS

200g Lindt Excellence Extra Silky White Chocolate

70ml Water

450g Quality vanilla yoghurt

Little Vanilla bean paste

2 Mangos (medium) around 400g flesh

60g Honey roasted macadamia nuts, chopped

DIRECTIONS

1. Mix together water and chocolate in a saucepan and gently melt on low heat.

2. Stir together, the yoghurt, vanilla, chocolate and half the mango.

3. Blitz until smooth using a stick blender.

4. Chop the remaining mango and fold into the  yoghurt mixture along with the chopped nuts

5. Fill into icy pole mould or little cups, put a stick in place and freeze.

TIP: Be a little naughty and add a splash of Malibu for an adults-only dinner party treat!
