
This decadent dessert has all of the makings of a superstar. Silky crèmeux with the smooth characteristic flavours of delicious Lindt Milk chocolate, complimented by sweet, refreshing mango and a pop of exotic chilli. Let this take your taste buds on a journey.
Servings: 4 depending on size (7cm ring used)

You’ll need: Lindt Dessert Premium Milk

INGREDIENTS
Crèmeux
250g Crème Anglaise
180g Lindt DESSERT Premium Milk, chopped
Crème Anglaise
125ml Milk
125ml Cream
25g Brown sugar
50g Egg yolks (from about 2 medium eggs)
Pinch salt
To finish
2 Mangoes
Pinch Dried Chilli flakes
Milk chocolate shavings
DIRECTIONS
1. Best prepare your Crèmeux a day in advance
2. For the Crème Anglaise: Combine milk, cream and half of the sugar and the salt in a saucepan and bring to the boil.
3. Lightly whisk the egg yolks and the remaining sugar.
4. Once cream, milk mixture is boiling, gradually whisk into the egg yolks.
5. Return to a saucepan and gently heat until mixture thickens and coats the back of a spoon (if using a thermometer heat to 82°C)
6. Strain into a bowl.
7. Weigh up 250g of the Crème Anglaise and place in a bowl.
8. Add the chopped chocolate and using a stick blender, create a smooth, silky mixture.
9. Line some rings with baking paper and divide mixture.
10. Allow to set overnight. (for easier handling and a clean finish, place in the freezer)
11. To finish, remove crèmeux from ring and place on a serving plate.
12. Top with thin slices of fresh mango and finish with some chilli flakes and shaved chocolate.
TIP: Get fancy by setting the crèmeux in a container and trying your hand making a quenelle and placing it ever so delicately on top.
