Beef & Lemongrass Stir-Fry

4 tbs vegetable oil
1 red onion (thinly sliced)
2 garlic cloves (minced)
1 lemongrass (stalks finely chopped)
700g beef rump (thinly sliced)
100g green beans (halved)
1 red capsicum (sliced in strips)
60mL soy sauce
2 tbs rice wine vinegar
cooked rice (optional)

1. In a wok or large non-stick fry pan heat the vegetable oil and fry off the onion, garlic, and lemongrass for approximately 2 minutes.

2. Add the sliced beef, green beans, red capsicum, soy sauce and rice wine vinegar. Gently toss until well combined and cook until the beef is cooked through and the vegetables are tender.

3. Spoon your super tasty and simple stir-fry into serving bowls and serve with rice if desired.
