Puff pastry pizza

Serves 4

1 pack puff pastry

10 tsp tomato puree

50-150g grated tasty cheese

100g mozzarella, torn into chunks

Your choice of toppings (mushrooms, onion, capsicum, ham, tuna, cherry tomatoes, basil, etc)

1 egg, beaten



1. Preheat your oven to 200 degrees C and lay the pastry on a greased baking sheet. Prick the pastry all over with a fork, leaving an untouched border of 3cm around the outside.

2. Spread the tomato paste on the base (not the border), add your chosen toppings, followed by cheeses.

3. Brush the border with the beaten egg, place the pizza in the oven and bake for 20 minutes. The edges should be risen and golden brown.

Top tip: Serve hot with salad for a quick and easy Summer dinner.
