Zucchini, ham & feta frittata

Why we love zucchini, ham and feta frittata:

1. A quick and healthy option for dinner.

2. Zucchini, ham and feta can be swapped for whatever you have in your fridge: capsicum, mushrooms, chicken, Parmesan, blue cheese, etc.

3. Leftovers make tasty lunches heated up the next day.

4. High in healthy protein and low carb.

5. Eggs contain B vitamins, vitamin D and omega-3s.



Serves 3-4

8 eggs

Salt and black pepper

Olive or coconut oil

2 zucchini, thinly sliced or grated (your choice)

150g ham, thinly sliced

1 red onion, sliced thinly

75g feta, drained and crumbled



1. Beat the eggs, salt and pepper in a bowl.

2. Heat a large non-stick frying pan over a medium heat with the oil, gently fry the zucchini and red onion and cook until soft and slightly golden. Add in the ham at the end to heat through.

3. Spread the vegetables and ham evenly around the pan, then pour in the egg mixture and increase the heat slightly, but be careful so as not to burn the bottom of your frittata. Meanwhile, heat up your grill.

4. When the frittata starts to set, sprinkle the cheese evenly on the top, then place under the hot grill for two to three minutes. The top should be golden and bubbling and set. Serve immediately with salad or steamed greens.
